How To Cook A Whole Hog On A Grill

If you want to take your barbecue skills up a notch, why not attempt to roast a whole pig? Impress friends and family by serving them roast pig with crispy, flavorful skin on the outside and moist, juicy meat on the inside.

Here’s a quick guide to help you get started on roasting your hog:

1. Ask your butcher to thaw out and if possible, butterfly the pig for you. It should save you time when you’re ready to roast your pig! After all, that’s what your butcher is for.

2.  You would also want to prepare your dry rub for your pig.

Here’s a suggestion:

  • 1 cup brown sugar
  • three tablespoons of salt
  • 1/2 cup black pepper (ground)
  • 1/2 cup cayenne pepper

3. Mix them in a bowl and set aside.

4. The amount changes depending on the size of your pig so feel free to scale up your dry rub ingredients to accommodate your pig size.

5. You can also prepare your injections to keep the pig tasting juicy.

6. After you have your pig and dry rub ready, it will be time to start prepping it for roasting. 7. Coat the meat with yellow mustard but make sure you’re not getting any of the yellow mustard on the skin.

8. When the coating is done, you can now start applying your dry rub all over the meaty parts of the hog. All the same, avoid getting the dry rub on the skin.

9. What happens to the skin, you ask? You clean it up from possible debris from the dry rub after you’re done with the inside of the hog. After you’ve cleaned that up, spreay the skin with vegetable oil so it doesn’t burn inside the roast box.

Is The Bobby Flay Smoker Box A Great Buy?

bobby flay smoker boxSmoking is a cooking technique that’s used to preserve, flavor or cook food. It involves exposing the food items to smoke that comes from burning wood chips. You can smoke fish, beef, pork, lamb or any other types of meat, for that matter. You may also smoke vegetables, cheese and even beer if you prefer. You can smoke food using your barbecue grill or you can also make use of specially designed smoking equipment like Bobby Flay’s smoker box. Haven’t heard of it? Here’s an article you should read.

Bobby Flay’s Carbon Steel Smoker Box

Bobby Flay’s carbon steel smoker box is the first gadget/tool available at an affordable price made for one function and it does it well. It is under $15 and it isn’t the cure-all-multi-purpose tool like some of the other celebrity chefs are offering to the public. It contains no gimmicks; it isn’t a preexisting product with a famous name on it, it’s not a regular Wal-Mart pan with Rachel Ray’s name on it. It’s simple, it’s a box that you place wood chips in, add heat and smoke appears. A lot of smoke appears.

You can use wood chips, wood chunks, even smoking pellets (keep in mind you can’t soak pellets, they become a mythical substance if you add water to them, so you have to adjust your heat source to an indirect method.) Soak your wood chips, place them into your BF smoker box, cover the box with the charcoal of your choice and you have more than enough smoke for any cooking project you may have in mind.

According to the article, Bobby Flay’s smoker box is a great buy after all. It is simple and easy to use. It produces a lot of smoke that gives any type of meat lots of flavors, too. Most importantly, it is not expensive. How often do you find a product like that, right? There are so many products and cooking equipment being endorsed by celebrity chefs and not all of them prove their worth. Most of them, in fact, disappoint us in the end. Anyway, if you happen to have the smoker, try this delicious recipe from Bobby Flay, himself! Happy grilling!

Curry Rubbed Smoked Chicken Thighs with Sorghum-Chile Glaze

Sorgum—you can think of it as the South’s maple syrup—is sweet yet earthy with a touch of spice that a dash of chile de arbol brings to the forefront. If you can’t find it, a combination of honey and molasses will do the trick.

To make the brine, bring 4 cups cold water, ½ cup of the salt, and the sugar to a boil in a medium saucepan and cook until the salt and sugar are dissolved, about 2 minutes. Remove from the heat and let cool completely.

Put the chicken thighs in a bowl, add the cooled brine, cover, and refrigerate for 30 minutes and up to 1 hour. Remove from the brine, rinse well, and pat dry.

I hope that you learned how valuable it is to have a Bobby Flay smoker box. If you need more information about this cooking technique, check out my other blogs on what is smoking. Fantastic Chicken Drumstick Recipes On The Grill

chicken drumstick recipesIf you think that chicken drumsticks are only good for frying, you are definitely wrong. It’s also equally enjoyed when cooked on the grill because the said technique is known for keeping the meat juicy and moist. What’s good about chicken meat is that they’re relatively healthier than red meat. Barbecuing is also healthier as well because it doesn’t make food items get soaked and cooked in fat, just like what frying does. Grilled Lemon-Oregano Chicken Drumsticks

Whisk first 6 ingredients in small bowl. Season to taste with freshly ground black pepper. Pour marinade into 1-gallon resealable plastic bag; add chicken and seal. Turn bag to coat chicken. Marinate at room temperature 30 minutes or in refrigerator up to 2 days, turning occasionally.

Prepare barbecue (medium-high heat). Place chicken, with some marinade still clinging, on grill rack; grill chicken until cooked through and golden brown on all sides, turning frequently, about 30 minutes. Transfer to plates and serve.

Lemon and oregano surely looks like a great combination! The garlic cloves give the marinade a kick, too. Now just be certain that you’ll use virgin olive oil because it’s a healthy alternative to regular cooking oil. You may have noticed that the recipe above is very simple to follow and also made use of a few ingredients. If you want something spicier, try this recipe from a popular cooking blog.

How To Roast A Turkey Like A Barbecue Master

how to roast a turkey

A roasted turkey is a holiday favorite! Think about all the Thanksgiving and Christmas dinners that were made even more special because of its blissful deliciousness! Now the only question is, are you already an expert when it comes to turkey roasting? Or are you still relying on your mother to do the cooking for you? Well, whatever your answer is, I’m here to help you! Before I share with you the turkey cooking instructions, check this article first as it details the amount of time you’ll have to cook your fowl on the grill depending on its weight.

Turkey Roasting Times Chart

This chart will help you determine approximately how long to roast stuffed and unstuffed turkey. Always use a meat thermometer to gauge doneness.

For a stuffed turkey, the roasting time may vary up to 30 minutes, depending upon the bird and the oven. Use the meat thermometer to check the temperature of the dressing. The center of the dressing inside the bird (or in a separate baking dish) must reach a temperature of 165 degrees F. for food safety.

According to the article, there’s a difference in the cooking process and roasting time between a stuffed and unstuffed turkey. I guess that makes sense because stuffing it with ingredients will require more cooking time in order to cook what you’ve put inside it. It was also mentioned that the use of a wired thermometer is important in order to confirm whether the inside of the fowl is already cooked or the otherwise. Anyway, let me share with you this article that features roasting tips and recipes! Enjoy!

Turkey Recipes and Tips

If you choose to roast your turkey unstuffed, you can cook the stuffing on the side in a casserole dish. Add some stock to replace the turkey juices it would have absorbed in the cavity. You can also sauté the turkey liver, gizzard, and neck in butter, cut up (shredding the neck meat off the bone) and add them for more flavor. This will make the stuffing nearly as rich as if it had been baked in the turkey itself (though don’t forget to make a meatless version if you’ve got any vegetarians on the guest list).

Not stuffing your turkey also means there’s room in the cavity for aromatics, which will season the bird and add complexity to the pan drippings used to make gravy. Try placing onion quarters, celery stalks, parsley, thyme, salt, and pepper in the turkey before roasting.

How to Throw a Clambake

In its purest form, a ‘Cleveland-Style’ clambake is traditionally packed into a steamer (aka: giant stock pot that sports a nifty faucet at the bottom) by the vendor and cooked by the customer in their setting of choice. The classic clambake steamer will be packed with clams (bagged by the dozen) at the bottom, sweet potatoes in the middle and chicken halves (or quarters) on top. Shucked ears of corn are on the side and added to the bake after the chicken is steamed and pulled from the pot. Then you’ll get your slaw’ and roll on the side.

At the bottom of the pot and all of the tasty food, your steamer should come equipped with a false bottom, which essentially protects the food from resting directly on the bottom of the steamer pot and provides an area for cheese cloth and water to be placed, poured and steamed into a delicious broth. The false bottom is a must, due to the fact that your steamer is being placed over a very strong burner or fire pit and can easily burn the food if the false bottom is not there, regardless of water.

The tradition of the clambake goes back to the Native Americans who taught the new comers the art of steaming clams, corn, potatoes and other things in a hole in the ground. This ancient form of cooking has grown in popularity and is an event for celebration all over the world.

The traditional method for throwing a clambake is to start by digging a hole in the ground. Cover the bottom of the hole with large stones and build a large, hot fire on top of the stones. This fire needs to burn for a couple of hours to heat those stones as hot as they can get. In the meantime you can prepare the food. The false bottom is a must, due to the fact that your steamer is being placed over a very strong burner or fire pit and can easily burn the food if the false bottom is not there, regardless of water. Most novices, and experts for that matter, opt for the burner, seeing as it is more manageable, produces a stronger flame, and is simply easier to ignite. Your vendor should have burners for rent that will do the trick (These burners connect to a propane tank, just like a grill, so make sure you have a full tank of propane ready for your bake day.) Once your bake is on the flame (assuming you have a nice, strong flame) and depending on how many bakes you have, you’re looking at about 45-60 minutes until your pot starts to produce steam… once this happens you’re looking good and “ooooohwweee” the aroma starts to take over the party. It’s a good idea to have a pitcher handy, so you can dispense the broth from the steamer faucet and baste your bake with it. ON THIS NOTE: IT IS VERY IMPORTANT not to remove the lid more than once or twice to baste the bake with the broth, and make it quick, because you don’t want to lose that steam, which is cooking your food. ALSO, you have to drink some of the broth, because it will make you feel warm and fuzzy and really adds to your own ‘personal’ tradition (just suck it up and do it… haha).

That being said, your cooking will be more convenient if you use a high end cooking equipment. Trust only the one that can deliver all your cooking needs, La Caja China Roasting Box!
